Because 'Ariksta' wants to have her memories of Asian food revived again I am posting V's curry and roti recipes here for her. Others may like to try it also. Delicious and absolutely authentic from Vaishali, India.
Chicken Curry.
1 kg chicken - thighs or breast
250 g red onion
2 tsp ginger paste
2 tsp garlic
1 tsp tumeric
250 gm tomato
Salt
1 tsp red chilli
2 tbsp coriander powder
Put about 2 tbsp oil in the pan. Chop onion - brown in oil.
Add the rest of the mixture of spices and fry until the oil and the mixture separates. Can add a little more water if needed
Add chopped chicken. Simmer 15 minutes.
Add as much water as needed.
Decorate with coriander leaves.
Roti
1/2 kilo flour
1 cup cold water
Pinch salt.
Put flour onto a board and make a hole in the centre. Gradually add a little water at a time, mixing it in with fingers in circular motion. Add more and more until the mixture is mixed together. Do not rush this and let the water leak out of the walls of the flour. Knead it together for about 2 minutes. Leave for 5 minutes. Roll small pieces of the dough on a cold board and fry in a little oil quickly - both sides.
Yum - messy until you know what to do but GREAT!!
